I've been the one who opened the restaurant and the guesthouse at seven and closed out the till at one in the morning. I was the one who went to the table to talk to the guest who got the wrong order, to the guest who arrived and found no booking, to the one who paid and left unhappy. Ten years in operations across Brazil, Nicaragua and Costa Rica, as general manager, owner and consultant. I led multicultural teams of up to 35 people, served international guests, and answered for every number at the end of the month, good or bad. After that, I built the first management P&L and the first KPIs for a factory with 17 years in business, and trained the team to run it without me.

I didn't learn operations in a course. I learned them closing the till, fighting with suppliers and dealing with a tired team.
